When I enter the first letter in the address field, some address's come up
to help speed up the process. Where do these adress come from? I would like
to delete some of them but cannot find where they are. Not in my contacts

This is known as the auto-complete function. Windows Mail will
remember up to 29 of the email addresses you have most recently
sent emails to. There is no easy way to remove a bad email address,
since it requires editing of the registry.
Eventually it will drop off the remembered list.
Until it does, just click on 'TO:' and pick the correct address from
the list of contacts.
