I am using offline files and folders rather heavily and
so for it has worked fine. I have one small problem
though. One of our file servers (GrapeJelly01) went belly
up. All of the files were successfully transferred to its
replacement, but the replacement server (AppleButter01)
has a different name. I've deleted all of the offline
files from my laptop, and setup the files on the new
server for offline us and things are syncing fine. THe
problem is that even when I am on the office lan I still
get messages about the old file server (GrapeJelly01)
being offline and unavailable. Where do I tell XP that I
don't want to use anything on the old server any longer?

You need to re-initialize the cache - deleting the files won't stop
