The Pidgin jabber client, which I use when I'm running in linux, has a
_very_ handy feature: it can query the server and present a list of the
registered accounts. Near as I can tell, Adium, which even the Pidgin
developers like to call "Pidgin for osx" doesn't seem to provide any way
to do this. Is this feature available in Adium and I'm just not seeing
it? If it's not, are there any osx jabber clients that have it?

Do you mean query as a simple list of user?
Maybe simple search with no criteria would give you satisfaction?
Alone jabber client, I tried with macosx is PSI. It can do that.

Any kind of search is better than nothing, which is what I have now.

Yes, this has the feature I'm describing. Thanks for the pointer.
Unfortunately it's PowerPC, so it runs emulated on my MBP; and the gui
design is awful. Still, I could use it just for searching and then
switch back to Adium once I find the account ids. Maybe I'll try
building from sources to make an intel version.
