Check man portage, especially the /etc/portage files.

create a file at /etc/portage named package.mask. In that file list all the
package you don't want...

An example would be:

=kde-base/kdeedu-3.3.0_beta2


The "=" sign means exact version, "<" means previous versions and ">" means
later versions.

Before you trust your new package.mask file, run emerge with the "-p" switch
to test your efforts for accuracy.
