How can I keep Lenny's setup from installing a bunch of stuff I don't
want? My systems are for industrial data collection, and need the
graphical interface and system utilities (system monitor, file browser,
gedit, etc), but not all the user stuff like Cheese, Evolution, the
Audio drivers, etc.
How can I keep it from installing the user stuff, and still leave the
gnome desktop and system utilities?

Do a minimal netinst and choose no desktops. After rebooting to a
tty-only environ, issue this command:
apt-get install xorg gnome-core gdm
That'll get you X, GDM login screen and "minimal" GNOME. Leave out GDM
and go from tty1 to X to save space, procs, etc. I use XFCE4 from tty1
and have 53 procs on a desktop and 28 in tty.

Thanks; I'll give that a try. I was hoping that an "Expert" install
would give me more granularity in the software packages to install than
the basic one, but it had the same generic list when it got to that
point.

In addition to the suggestions to do a minimalistic install and
customize it step by step, you may have a look at
http://wiki.debian.org/DebianCustomCD, especially if you have to install
more devices with the same setup.

Sorry, dude! Yes, really, my apologies. But, at least you have it for later use.
